VINEYARD DETAILS: Alluvial soil and drip irrigation

CLIMATE: Dry and continental with great sun exposure allowing perfect ripening

VINE CULTIVATION: Vertical shoot position trellising

VINIFICATION: Base Wine: Pre-fermentative maceration at low temperatures. Technique used: enzymes

FERMENTATION: 20 days in stainless steel tanks at 13 – 16ºC

Second fermentation: Charmat Method

AROMAS: Intense, on the nose the wine brings fresh notes of green apple and grapefruit, with delicates hines of acacia

COLOUR: Light green with silver shimmers

PALATE: Delicate flavour slightly acidic. Lime, pears and apple flavors. Excelent balance, crisp with persistence and tiny bubbles

ALCOHOL: 12,5% Vol.

RESIDUAL SUGAR: 13 g/l

TOTAL ACIDITY: 6,2 g/l

SERVING TEMPERATURE: 6 – 9ºC

PAIRING: This sparkling young wine pair great with the briny and salty flavors of the fresh food seafood and in classic coctels, like Bellini.
